On this new version of the Samsung touchWiz, based on the newly release Android version 5, Lollipop, the way to access and change apn settings has not changed much.
You should first go to the main menu of the Galaxy S6 EDGE, and then Tab on Settings. Alternatively, you can also access the settings menu by just sliding down the notification screen.
